When chef Alexis Noble’s restaurant Wander was forced to close in March 2020, she created Wander at Home, making versions of the restaurant’s dishes that people could recreate at home. She then collated these recipes into a cookbook, which she crowd-funded and self published. To coincide with its launch, Alexis has curated a menu of her favourite dishes from the book.

To start, Alexis incorporates umami Aussie favourite, vegemite, into a rich, buttery garlic bread. It’s the ideal tool for dunking into fresh, creamy burrata, which is served with a warm dressing of sweet cherry tomatoes and shallots, new season wild garlic and sharp, salty caper berries.

For the main, succulent, garlic and herb–roasted chicken is paired with tangy, house-fermented red peppers. “I tried fermented peppers from a Portuguese chef a few years ago and now I always have them at hand because they add an extra level of deliciousness to dishes,” says Alexis. She serves the chicken with roasted potatoes to soak up all the juices.

For the vegetarian alternative, Alexis incorporates the fermented peppers into an indulgent cannelloni. It’s also filled with spring greens, ricotta, lemon zest, and a mix of shiitake, enoki, porcini and field mushrooms, combined with a creamy, mozzarella and Parmesan–loaded béchamel sauce. Both mains are accompanied by a baby gem and herb salad, tossed in Wander at Home’s punchy roast garlic and miso dressing.

“It wouldn't be a Wander menu without pavlova, it’s the quintessential Australian dessert,” says Alexis. For her seasonal, British twist, she makes a compôte of roasted British rhubarb and strawberries which she piles onto crisp meringue with whipped Jersey cream from Somerset-based Ivy House Farm.

A copy of Wander at Home is included with every menu, so that these dishes, and more, can be recreated at home.
