"Our curries are light," laughs Thuy Diem Pham, "then you feel the heat later!" She highlights the common misconception that Vietnamese curries are just like Thai or Indian curries. Instead, they're distinct in being light, creamy, and fresh. Here, your choice of marinated chicken or juicy king prawns are served with a fragrant curry sauce, made with coconut, lemongrass, fish sauce, galangal, lime leaves and a host of other herbs and spices. It's accompanied by steamed jasmine rice to soak up all the flavours.

Alongside the curry there's a selection of side dishes to complete the feast. Prawn skewers are marinated in soy sauce and lemongrass, and crispy tofu skewers with chilli oil and peanuts. Aubergines are baked and topped with pork mince.
