"At this time of year, I like fresh, vibrant flavours and making the most of new season produce," says 10 Greek Street's head chef James Mossman. His Summer Supper for one begins with smoky trout rillettes, contrasted with sharp fennel and cucumber pickles and served with lard-infused crispbreads.

With simple cooking on warm evenings in mind, the potted trout can be enjoyed while the braised lamb shank heats in the oven. The shank has been slowly braised in lamb stock and red wine, and cooked until falling apart on the fork. Once ready, it’s served with early summer potatoes and vibrant peas, all stirred through with a generous handful of fresh mint. On the side, green bean salad is folded through with salty olives and almonds for texture, with a sherry vinaigrette adding piquancy.

Finally, vanilla and crème de mûre cheesecake, made with a blackberry liqueur, comes with summer berries and a crumb made with oats and ginger.
