Chef-founder Gabriel Pryce grew up between London and the USA, and begins his menu with an American party staple: Buffalo chicken wings with blue cheese and celery - “a jovial food for celebration,” he says. Next, Gabriel pays homage to the low-and-slow barbecue traditions of the American South with his pork ribs, rubbed with 'Wrong Way' spice mix and gently cooked for four hours until tender. They're accompanied by a classic Carolina barbecue sauce, finished with a dollop of English mustard, and best picked up and eaten with the hands, with a stash of napkins at the ready. Pasta salad is a summery take on Rita’s signature mac’n’cheese, lightened with tahini and sesame, and airy cornbread is ready to be slathered in a whipped honey thyme butter. Rounding out the menu are Oreo pie pudding, featuring homemade Oreo cookies.

“This is best eaten al fresco with friends,” says Gabriel. “Take it to the garden or even the park and throw the ribs on the barbecue - any way you can get some fresh air and some Carolina barbecue sauce in the same place is a very good thing.”
