Hoppers’ latest menu features a selection of light, fragrant Sri Lankan dishes for spring, with a choice for each course.

Starting with a snack, choose between curry leaf peanuts or salted banana chips. Next, crunchy, croquette-like rolls are filled with either spiced mutton or curried vegetables, then served with a tangy Sri Lankan ketchup for dipping.

“Devilled dishes are very popular in Sri Lanka, inspired by flavours from East Asian cookery including chilli, onions and layers of umami,” explains Karan. For his next dish, choose between crispy-skinned chicken wings or cubes of lightly charred paneer, generously coated in a spicy devilled sauce.

For the fish centrepiece, whole sea bream is marinated in mango, ginger and garlic then wrapped in a banana leaf and cooked until succulent. “We suggest unwrapping the fish at the table to really wow diners,” says Karan. The bream is served with an aromatic curry sauce and scattered with crispy curry leaves.

For the vegetarian alternative, hispi cabbage is roasted until tender and charred, then combined with a light and fragrant coconut curry sauce. “I love the sweet, smoky notes of roasted hispi cabbage,” says Karan, “they work beautifully with the curry sauce.” The cabbage is drizzled with chilli oil and scattered with crispy, fried curry leaves to finish.

Alongside the main, choose from flaky rotis and a refreshing carrot and coriander sambol, or string hoppers (steamed nests of vermicelli-style noodles) and pol sambol – a fresh coconut, lime and chilli relish.
