“For our Spanish take on steak and chips, we use ‘Txuleton’ steaks, which come from former dairy cows in Galicia, northwest Spain,” explains José Pizarro, “these on the bone, rib steaks are dry-aged for 30 days to develop a deep, umami flavour and tender texture.” José recommends simply salting the steak, then cooking it until rare, ready to be paired with his thick-cut, triple-cooked chips.To complement the rich, salty flavours of the steak and chips, José confits roasted, Spanish piquillo peppers in their brining liquid with a touch of sugar until soft and sweet. There’s also a bitter leaf salad, tossed in a sharp lemon vinaigrette and an earth, roasted beetroot and red cabbage side.To finish, José’s signature dessert combines rich, 70% dark chocolate ganache with a drizzle of extra virgin olive oil and a pinch of Maldon sea salt. It’s accompanied by a crunchy shortbread biscuits for dunking.
