Chef Ixta Belfrage’s seafood menu is a whirlwind tour of dishes inspired by her Brazilian, Italian and Mexican upbringing – “these three cuisines have shaped the way I cook,” says Ixta. Her take on Mexican hibiscus agua fresca is laced with cinnamon, mint and lime, and can be enjoyed as is, or better yet, with tequila or mezcal. To snack on alongside, there are crunchy radishes for dipping into lime mayo.

Next, Ixta’s take on a torta ahogada, meaning ‘drowned sandwich’, is a messy brioche roll filled with lime-cured market fish and dipped in a prawn miso bisque. This is strictly to be eaten with your hands, so the sauce trickles down your wrists.

Ixta’s prawn lasagne is a lighter take on the classic dish, featuring miso, Parmesan and a fruity, smoky habanero chilli oil. Lots of different chillies run throughout the menu, mostly used for flavour rather than heat. A zingy gem lettuce, lime and spring onion salad dusted with sesame salt will help cut through the richer dishes.

The chipotle chocolate tart, served with a fluffy cinnamon coffee cream and lime and vanilla–poached plums, can sit in the fridge until required - no need to serve immediately if you’re enjoying a long, lazy, late summer lunch.
