For Kanada-Ya’s latest menu, choose between some of the restaurant’s most popular ramens, including tonkotsu X (pork) ramen, paitan (chicken) ramen or the new shifudo (seafood) ramen.

“The tonktosu X ramen combines our 18-hour pork bone broth with our corn-fed chicken broth for a ramen that’s slightly lighter than the classic tonkotsu,” says Kanada-Ya director Aaron Burgess-Smith. Hakata ramen noodles are added to the broth before the dish is topped with traditional sliced chashu, made by simmering pork collar in a mix of soy sauce, saké, ginger, garlic and chilli.

“We created the shifudo (seafood) ramen as a special for our Carnaby Street branch,” explains Aaron, “we fry langoustine shells and tiger prawn heads to create a concentrated oil which we add to our tonkotsu base to create a salty, seafood broth”. Blue swimmer crabs are also added for extra flavour, before the soup is strained and the noodles are put in. It’s topped with sliced chashu pork, along with sweetcorn and ito togarashi – fine strands of mild red chilli, also known as angel hair chilli.

The paitan ramen is a comforting broth made by simmering corn-fed chicken bones for twelve hours until rich in flavour. It’s poured over chicken shmaltz (rendered chicken fat) to add a silky texture. It’s packed with leeks, spring onions and Tokyo noodles and topped with chashu chicken.

Each ramen is also garnished with beni shoga (pink pickled ginger), takana (pickled Chinese mustard leaves), spring onions and a chashu-marinated, soft-boiled egg.
