Birria is cooked in lots of different parts of Mexico. Regional differences see it being made with beef, goat, or in chef-founder Gabriel Pryce’s version, lamb. Traditionally, the meat is served with its own broth and there’s no prescriptive way to eat it: ‘rip some, wrap it in a tortilla, dunk it in the broth or eat it with rice and beans’ says Gabriel. Accompanying the birria is a salsa made with tomatillo – a type of Mexican tomato ‘almost like a gooseberry’ – which provides the perfect fruity tartness to cut through the fat of the lamb. Rounding off the menu are spongy slices of tres leches cake drenched in dulce de lece and spread with thick cinnamon cream. Gabriel describes it ‘a messy, summery feast, best enjoyed with lots of wine and beer.’
