Sichuan cuisine is known for being both spicy and mouth-numbing – “the two flavours in conjunction give a sensation called málà” explains Mao Chow founder Julian Denis. His comforting, vegan take on dan dan noodles is one of the restaurant’s most popular dishes.

It combines fresh noodles with a plant-based mince flavoured with garlic, soy sauce, Shoaxing wine, and pickled chillis. This is tossed in an umami-rich, soy and sesame sauce with punchy, Sichuan peppercorn oil, and finished with fresh white cabbage, pak choi, spring onion and peanuts, “ready to be mixed together and slurped.”
