Popular Middle Eastern brunch and bagel spot The Good Egg has joined forces with Instagram sensation Michael Zee, better known as Symmetry Breakfast, to create an exclusive brunch menu. The feast combines The Good Egg’s Israeli and Jewish deli style dishes with Chinese influences, inspired by Michael’s time living in Shanghai.

“For the main event, we wanted to do a play on hong shau rou because it’s so well-loved in China”, says Michael. Hong shau rou (meaning red braised pork) is pork belly cooked in Shaoxing wine, soy sauce and brown sugar. For The Good Egg’s take on the dish, executive chef Jooles O’Sullivan uses British pork shoulder from Swaledale butchers, which she slow-cooks and shreds to fill the restaurant’s renowned bagels, coated in ‘everything seasoning’ and Sichuan peppercorns. The bagels are also filled with ‘furu mayo’ (an umami-rich mayonnaise spiked with fermented tofu), crunchy slaw and lightly pickled British pears with spring onion – a popular accompaniment to barbecued meats in Hunan, China, Michael explains.

For something sweet, The Good Egg has flavoured its famous babka with sweet Chinese red bean paste and chocolate, dusted it in cinnamon sugar and served with a sweet-salty tahini caramel. To drink, a refreshing lychee and Jasmine tea shrub comes garnished with a beetroot-cured lychee.
