“Canelón is a traditional Catalan cannelloni which is filled with different meats, then topped with béchamel sauce and baked in the oven,” explains José Pizarro.

José starts by making the rich, meat filling. He fries beef mince with sweet, slow-cooked onions, garlic and Manzanilla sherry, then combines with shredded, roasted chicken and chopped 100% Ibérico pork jamón. The filling is piped into cannelloni pasta rolls in a terracotta dish, then covered in a creamy béchamel sauce. To finish, it’s sprinkled with grated manchego cheese, ready to be baked in the oven until bubbling hot.

To cut through the richness, José accompanies the dish with a bitter leaf salad, tossed in a sweet-sharp lemon and honey dressing. There’s also crusty sourdough bread for soaking up the sauce.
