Their signature Thanjavur chicken curry – a dish from chef Prince's hometown and a favourite with customers at their restaurants – is made with Tamila's own spice blend, roasted and ground in house. \"It's my favourite dish of all time,\" Prince says. \"I could eat it every day.\" Alongside it is a rich, smoky paneer butter masala, made with ripe plum tomatoes and a cashew butter sauce. They're served with fragrant spiced coconut rice and Tamila's famous puffed-up roti, another regional staple.
